Espresso Beverages
Espresso is the most flavorful when it is fresh. Requirements of espresso brewing: Water between 190-197 degrees Fahrenheit is forced under 8-10 atmospheres of pressure through 6-7 grams of a finely ground and tightly packed bed of coffee so that 1-1/2 fluid oz. of brew is delivered into a small cup in 20-30 seconds. Espresso is served in a "demitasse" the French word for "half cup" and generally has the capacity of holding 3 oz. of liquid.

Basic Espresso
A single shot (approx 1-1/2 oz. espresso). The Italian tradition is to ceremoniously drink the espresso "solo" in a single gulp to enjoy the fullest espresso flavor while the beverage is at its peak of freshness. Sweeten to taste.

Basic Cappuccino
Although ratios may vary to taste, a common recipe for a 6 oz. cappuccino is: 1/3 espresso, 1/3 steamed milk, and 1/3 frothed milk. Properly frothed milk should be approx 140 degrees to 160 degrees F. However, temperature is a matter of personal preference, and may be slightly hotter.

Cafe' Mocha
A single shot of espresso mixed to taste with chocolate syrup or powder and steamed milk. Top with whipped cream, if desired.

Americano
Combine 1 oz. of syrup, 1 shot of espresso and hot water in a 12 oz. mug. Try the combinations suggested below, and top[ with whipped cream for a decorative touch.

Cappuccinos
Simply pour 1 shot of espresso and 1/2 oz. of syrup into a 6 oz. mug and add foamed milk. Adjust flavor to taste. Here are a few combinations to get you started:

Italian Sodas
To make these traditional soft drinks, simply fill a tall 16 oz. glass 3/4 full of ice. Cover ice with sparkling water or club soda, and mix in 2 oz. of syrup. To make a Cremosa, add 1 oz. Half And Half or cream. Try these fun flavor combinations.

2 oz. Cranberry syrup
Jack Frost Italian Soda
1 1/2 oz. Chocolate syrup
1/2 oz. Creme de Menthe syrup

Shakes
To create these ice-cold blended treats with flavored syrup, simply combine ingredients in a blender and process until slushy.

Frosty Milk Shake
2 cups Vanilla or Peppermint ice cream
2 oz. milk
1 oz. Chocolate syrup
1 oz. Creme de Menthe syrup
Top with whipped cream, maraschino cherry and chocolate chips.
